HI Rick,
I'm lewis Wear and I think I know what the problem with your peppers is, you have not put them into big enough pots. If you want to increase your crop, a bigger pot usually creates a bigger plant.
You said that your stems were not as thick as you would have expected. I have two pepper plants and I caned them early just in case they were needed.

Although I live in Austria and the weather is a bit warmer, your greenhouse should produce an adequate heat for the peppers.
